In the meantime, you may want to combine this with the dired user
customization provided through 
dired-guess-shell-alist-user
which will let you hit '!' in the dired buffer and guess a
command for you. 
as an example, I use 
pdftotext ? - | cat -s 
for .pdf files etc.

We should cobine what you have with some of the scripts in
emacspek/etc tt are presentl used by thigs like v to ndle word
and ppt files in the default emcspeak setup.
